Established in 1892, the long standing Western Australian Trustees building on St Georges Terrace in Perth now serves as an entrance to The Trustee Bar & Bistro. Inside, the eye is drawn from mounted brass piping to booths of darkened wood and leather, all surrounded by stonewashed walls and columns. The Trustee fills with Perth locals soaking in the rustic bistro, sunbathing in a flourishing garden bar and exploring the Angel’s Cut Rum Bar upstairs with its own life-sized angel perched above the bar in glowing red light. With a Yarra Valley 2015 Rob Dolan Pinot in hand from a diverse wine list, sample 14 hour slow cooked beef cheek with Paris mash and mushroom ragout for a harmonious pairing, or fall for the confit duck leg with bacon lardons, du puy lentils, mash potato and port wine.
